Slicing knives can be used for a multitude of purposes, but are designed to slice items, such as cooked meats. The slicer should be longer than the product to be sliced, for proper control and precise portioning. Serrated knives, or scalloped-edge knives are also known as "Bread Knives" because they function perfectly for slicing bread, which requires a back and forth sawing motion. Yet, beyond breads, they can also perform well when used for slicing tomatoes or peaches or other fruits that have a skin that easily bruises. Serrated knives are designed to keep the slicing edge of the blade from coming in contact with the cutting board surface. A serrated knife should be professionally sharpened and should never be used on a sharpening steel. |
